Yummm...Croquettes...

Yum, yum, yum! I must admit I don't make these very often because they are a ton of work. The photos don't do them justice. They are ohhhh so yummy though!!!

Here is the recipe...

8 cups(approx) roast beef cut into tiny bits (usually we have a good size roast for dinner then use the left overs to make our croquettes)
2 eggs
1 cup (gravy or milk)
1 loaf bread broken into bits
1 onion (minced or diced)
1/2 cup butter/marg
box of kellogs corn flake crumbs
extra eggs (for coating)

Put the meat in a large mixing bowl, add the bread, in a seperate bowl mix the eggs, then add the gravy/milk...mix all together. Seperately sautae the onion in the marg, then add all together (you want them all sticky not too goopy or dry). Form into balls or oblong shapes. Have 2 plates...one for extra eggs & one for kellogs corn flake crumbs. Take your shapes, roll in crumbs then egg then crumbs again. As I do them I set them on a cookie sheet. When done deep fry on high for about 5 mins per batch. We have them just with ketchup & mustard and a side salad...YUM! YUM! YUM!
